SAKURAMOCHI

Sakuramochi is Wagashi for spring because it is using the leaves of cherry blossoms
Also their colo ur is the colour of cherry blossom
INGREDIENTS:
2 cups glutinous rice
red food color
3 cups water
3 Tbsps sugar
1 cups sweet red bean paste
salt pickled sakura (Japanese cherry blossoms) leaves
INSTRUCTIONS:
1) wash the rice well and soak in water for 30 minutes
2) add a little bit of red food color in the water.
3) boil the rice on low heat until liquid is gone.
4) put a lid over the pan and leave it for 5 minutes.
5) add sugar in the cooked rice and stir well.
6) press the rice into small round shapes.
7) place anko filling on each rice cake and fold it in half.
8) wrap the rice cake with a sakura leaf.
