YOUKAN

When Japanese people think of Wagashi, a lot of them think about Youkan.
They are very popular kind of Wagashi
INGREDIENTS:
dried agar-agar (a bar/7g)
water (300cc)
sugar (300g)
sweet red bean paste (600g)
millet jelly (50g)
INSTRUCTIONS:
1) put dried agar-agar into a bowl, put a lot of water in and leave it for overnight
2) boil 300cc of water, put agar-agar and dissolve it
3) when the agar-agar got all dissolved, put 300g of sugar and boil
4) after all sugar and agar-agar dissolved, filter with them with sieve
5) put the agar-agar back into pot and make them boil
6) when they boil, put the sweet bean paste in and knead them
7) if all of the ingredients got all mixed well, keep kneading them (*watch not to burn them)
8) put the millet jelly when the mixture becomes hard enoguh (*if you can draw a circle with it onto it and the circle stays)
9) put the mixture into container (anything flat. don't need it to be square)
10) cool them down until harden
11) cut them into bite-size
